Brew recipes by coffee

One starting recipe for all four. Espresso: 18–19 g in, 36–38 g out, in 27–32 seconds. Pour-over: 20 g coffee to 320 g water, in 2:30–3:30. Water at 199–201°F for both.

From there, small tweaks bring out what makes each coffee different.

Coffee Tastes likeHow to tweak it
Doublestar Strawberry, floral honey, stone fruitRun a slightly longer yield to open up more of the fruit.
Earthshine Chocolate, plum, blood orangeThe most forgiving of the Omni blends. Keep the water mid-range so the blood orange isn't lost under the chocolate.
Nebula Raw sugar, hibiscus, apricotBrew at the low end of the temperature range to keep the florals.
El Socorro Toasted almond, caramel, yellow pearEspresso only. Sour or underdeveloped: go finer. Bitter or hollow: go a touch coarser.
