It's our signature omni blend, and it's been part of the BIGFACE lineup from the beginning for a reason. When it's dialed in, it's vibrant, layered, and impossible to put down.
Meet the BF-X-01 Doublestar, the first of our Omni Trio — three blends roasted for versatility and designed to perform across every brew method. DOUBLESTAR leads the trio with floral honey, stone fruit, and strawberry notes that hit bright and finish with real depth. It's the kind of cup that makes you want to brew it again before you've finished the first one.
What multi-origin means for the cup
Blending across origins is one of the harder things to do well in specialty coffee. The goal isn't to average things out, it's to find a combination where each origin contributes something the others can't. One might carry the brightness. Another brings the body. A third adds the aromatics that tie it together.
With DOUBLESTAR, that interplay is the whole point. The floral honey and strawberry come from origins selected specifically for their aromatic lift and fruit-forward character. The stone fruit and grounding undertones come from components with more weight and structure. Together they create something that feels both bright and balanced, juicy without being thin, bold without being heavy.
Why omni roasting matters
Roasting a blend for omni use means finding a profile that doesn't compromise for either brew method — it has to hold up under the pressure and heat of espresso without losing the clarity and nuance that filter brewing rewards. That's a narrow target, and it shapes every decision from blend construction to roast development.
DOUBLESTAR is roasted to sit right in that window. The fruit notes are developed enough to read clearly in a shot but delicate enough to open up in a pour-over. The body is present without being so heavy that it muddies a filter brew. It's a blend designed to be genuinely versatile, not just technically functional across methods.
What "dialing in" means for an omni blend
Dialing in DOUBLESTAR is about letting the fruit come forward without losing the structure underneath. The strawberry and floral honey can tip sharp if you're running too hot or pulling too fast — and the grounding undertones can overwhelm if you go too coarse or too short. The blend rewards a little patience. Here's what to focus on:
Dose: For espresso, start around 18–19g in to 36–38g out. For filter, a 1:16 ratio is a solid starting point — roughly 20g coffee to 320g water. DOUBLESTAR has enough body to support a slightly longer yield in both methods if you want more of the fruit to open up.
Time: For espresso, target 27–32 seconds. For pour-over, aim for 2:30–3:30 total. Within those ranges the strawberry and stone fruit come through cleanly. Outside them, the brightness can read as sharp on the fast end, or muted and heavy on the slow end.
Temperature: 199–201°F works well across both methods. The blend is developed enough to not need aggressive heat, and staying mid-range keeps the floral honey and strawberry from getting lost.
Grind: Consistency matters more than any specific setting. DOUBLESTAR is expressive enough that an uneven grind will show — you'll taste it as a lack of clarity in the fruit notes. Dial for evenness first, then adjust for taste.
Why it matters

Not a shortcut, not a crowd-pleaser without character, but a carefully considered combination of origins that gives you something genuinely interesting in the cup. In milk it holds its own. The fruit recedes a little but the honey and floral notes carry through in a way that makes lattes and flat whites feel naturally sweet and a little aromatic, different from your standard caramel-forward espresso blend.

Because DOUBLESTAR works across methods, it's worth brewing it both ways before settling on your approach. What reads as bright and fruity in a pour-over becomes something richer and more grounded as espresso — same blend, different story. Taste both. Adjust. The coffee will show you where it wants to go.
