Like its cosmic namesake, it’s built on convergence, layered stone fruit at the front, blackberry depth through the middle, and a honeysuckle lift that lingers long after the last sip. Roasted light-medium to preserve clarity and vibrant acidity, it delivers a structured, high-definition cup with a clean extraction window for pour over and drip, while maintaining enough sweetness and balance to shine as a modern espresso.

We're honored to have Diego Horta's coffee on the site again — any time we can offer his work, it's a genuine occasion. At just 20 years old, Diego took over El Rincón, the farm his family has worked for generations, and has since become one of the most exciting young voices in Huila's specialty coffee scene — respected enough to be sought out by top roasters from Berlin to Chicago. This lot comes from his farm in Santa Maria, grown on steep terrain at 1,800 meters above sea level, and processed using the washed method Diego has refined with meticulous care.

Toasted walnut leads, rich and nutty, before a bright streak of grapefruit cuts through the middle. The finish is where EL RINCON sets itself apart — a warm, boozy whiskey note that lingers, giving the whole cup a weight and complexity you don't often find at this altitude. Medium roasted for balance. A coffee that rewards a slow pour and a quiet morning.

From the Junín region of Peru, Santiago de Oropel is a washed process coffee grown at 1,900 meters above sea level — high enough to slow cherry development and build the kind of sweetness and clarity this lot is known for. Producer San Martin's careful approach to processing shows in a cup that's floral, fruited, and layered without losing precision.

Honey opens things up, round and smooth, before orange blossom lifts the middle with a delicate, perfumed brightness. Blueberry carries the finish, juicy and lingering, rounding out a cup that's as expressive as it is balanced. Medium roasted to let each note stand on its own. A coffee for those who want their filter brew to do a little more talking.
