Like its cosmic namesake, it’s built on convergence, layered stone fruit at the front, blackberry depth through the middle, and a honeysuckle lift that lingers long after the last sip. Roasted light-medium to preserve clarity and vibrant acidity, it delivers a structured, high-definition cup with a clean extraction window for pour over and drip, while maintaining enough sweetness and balance to shine as a modern espresso.

ILOMA STATION is a washed Bourbon from Iloma Station in Songwe, Tanzania, grown at 1.850MASL. As espresso it opens with deep plum, moves into crisp red apple, and finishes warm with raw sugar and a touch of nutmeg. Roasted medium-light for espresso. Sweet up front, spiced on the way out. A BIG shot.

SANTA ROSA is a washed Pacamara from Jorge Raul Rivera's farm in Chalatenango, El Salvador, grown at 1,650 MASL. It opens with juicy white grape, moves into ripe plum and a soft rose florality, and finishes with smooth milk chocolate. Roasted light for filter and pour-over, so every note has room to show up. Pacamara is a variety that was born in El Salvador. Here it's back home, and BIG. Washed processing here means clarity: none of the funk of a natural, just a clean, precise read on what this farm and this elevation can do. Up front, there's an unmistakable bubblegum sweetness - playful, not cloying - that gives way to bright tangerine acidity through the middle of the cup. The finish is where it settles into something more grounded: panela, that unrefined cane sugar sweetness so common in Colombian coffees done right, rounded out by a crisp apple note that lingers. We roast this one for filter and pourover, where its clarity and brightness get room to breathe. It's the kind of coffee that reminds you why washed Colombian lots from a good farm, in a good year, are worth waiting for.
