Some coffees are built around a single origin. EARTHSHINE is built around an idea that the right combination of origins can do something no single one can on its own. It's the second blend in the Omni Trio, and it takes the omni philosophy in a different direction than DOUBLESTAR. When it's dialed in, it's rich, deep, and endlessly drinkable.

EARTHSHINE brings chocolate, plum, and blood orange notes that hit deep and finish with real brightness. It's the kind of cup that proves versatility doesn't mean playing it safe.
Blending across origins is one of the harder things to do well in specialty coffee. The goal isn't to average things out, it's to find a combination where each origin contributes something the others can't. One might carry the darkness and depth. Another brings the fruit. A third adds the acidity that ties it together.
With EARTHSHINE, that interplay is the whole point. The chocolate and plum come from origins selected specifically for their body and richness. The blood orange comes from a component with brighter, more citrus-driven acidity. Together they create something that feels both deep and lifted, rich without being flat, bright without being thin.
Roasting a blend for omni use means finding a profile that doesn't compromise for either brew method — it has to hold up under the pressure and heat of espresso without losing the clarity and nuance that filter brewing rewards. That's a narrow target, and it shapes every decision from blend construction to roast development.
EARTHSHINE is roasted to sit right in that window. The chocolate and plum are developed enough to read as body and sweetness in a shot but stay defined enough to show real structure in a pour-over. The blood orange is present without being so sharp that it throws off a filter brew. It's a blend designed to be genuinely versatile, not just technically functional across methods — and that versatility is really the whole point of EARTHSHINE.
Dialing in EARTHSHINE is about letting the chocolate and plum carry the cup without burying the blood orange underneath. Push too hot or too fast and the fruit note flattens out into something more generic. Go too coarse or too short and the acidity can jump ahead of the body. The blend rewards a little patience. Here's what to focus on:
Dose: For espresso, start around 18–19g in to 36–38g out. For filter, a 1:16 ratio is a solid starting point — roughly 20g coffee to 320g water. EARTHSHINE has enough body to support a slightly longer yield in both methods if you want more of the fruit to open up.
Time: For espresso, target 27–32 seconds. For pour-over, aim for 2:30–3:30 total. Within those ranges the plum and blood orange come through cleanly alongside the chocolate. Outside them, the fruit can read as flat on the fast end, or muted and heavy on the slow end.
Temperature: 199–201°F works well across both methods. The blend is developed enough to not need aggressive heat, and staying mid-range keeps the blood orange from getting lost under the chocolate.
Grind: Consistency matters more than any specific setting. EARTHSHINE is expressive enough that an uneven grind will show — you'll taste it as a lack of clarity between the chocolate and the fruit. Dial for evenness first, then adjust for taste.
EARTHSHINE isn't just versatile, it's the clearest proof that an omni blend can lead with depth and still brighten up in the cup. Not a shortcut, not a one-note crowd-pleaser, but a carefully considered combination of origins that gives you something genuinely interesting no matter how you brew it. In milk it holds its own. The citrus recedes a little but the chocolate and plum carry through in a way that makes lattes and flat whites feel rich and rounded, closer to a dessert-forward espresso blend than a typical fruit-driven one.
Because EARTHSHINE works across methods, it's worth brewing it both ways before settling on your approach. What reads as rich and chocolatey as espresso becomes something brighter and more fruit-forward in a pour-over — same blend, different story. Taste both. Adjust. The coffee will show you where it wants to go.
