SANTA MARIA

Huila sits in the southwest of Colombia, where the Andes split into three distinct cordilleras and the altitude swings between extremes. At 1,750 metres, the Santa Maria farm sits in that sweet spot where slow cherry development and cool nights concentrate sugars without sacrificing the clarity that defines great Colombian filter coffee. The washed process strips everything back, letting the terroir speak directly into the cup. Clean, precise, and quietly complex -- this is what great Colombian filter coffee looks like.
The cup opens with the crisp snap of Fuji apple, bright without being sharp. A blood orange mid-palate brings citrus depth and a soft acidity that lingers, before the finish rounds out into warm toffee. It is a coffee that rewards patience -- best enjoyed slow.
