Dialing In: Why Prep Is Everything in Espresso

Espresso at home is all about control. Every decision you make before you hit “go” shapes what lands in the cup. The best shots don’t come from chance, they come from prep.

In our latest video, we highlighted the BF-X-01 Doublestar, one of our classic BIGFACE coffees. It’s layered, with notes of seasonal fruit, cacao, and herbal acidity. But the truth is, those flavors don’t just appear because you loaded coffee into a portafilter. They show up when you take the time to dial things in.

What “dialing in” actually means

Dialing in is coffee’s version of calibration. It’s the process of tweaking a few key variables until everything is working together. Get it right, and the shot runs smooth and balanced. Miss the details, and the same coffee can taste hollow, sharp, or muddy.

Here’s where it starts:

  • Grind: Fine adjustments make big differences. A grind that’s too coarse leaves you with thin, sour coffee. Too fine and the water can’t move, resulting in bitter, heavy shots.
  • Dose: Always weigh it. A gram too much or too little changes extraction more than you’d think.
  • Distribution: Before tamping, make sure your coffee bed is level and even. This prevents channeling, where water rushes through weak spots instead of extracting evenly.
  • Tamp: Steady, balanced pressure. Not about brute force, it’s about creating a uniform surface for water to do its job.
  • Yield: The final weight of liquid espresso matters as much as the dry coffee you put in. A classic starting point is a 1:2 ratio—say 18 grams in, 36 grams out. Think of water as the element that develops and carries flavor. Too little water and the shot can be overly acidic and sharp. Too much water and it risks falling flat, washing away sweetness and body. Yield is where balance lives.

Why it matters

Dialing in isn’t about chasing perfection. It’s about creating conditions where the coffee can actually speak. When you get the prep right, your cappuccino doesn’t just taste “good,” it tastes alive. Sweetness lines up with acidity. Structure balances with body. Every note has space.

Here’s the catch: dialing in isn’t a one-and-done. Even the same coffee shifts with humidity, grinder burrs, water temp. That’s the beauty of it, you’re not just making espresso, you’re engaging with it. Taste, adjust, repeat. Small moves, big payoffs.
